We are rescuing the Past incorporating it into the future.

Our home, the Acosta & Fores house, was built in 1912.  It is a national landmark in Puerto Rico an in the United States.  The hand painted stencils dating from 1916 decorating its walls are the only ones of their kind on the region. Library

We are located in San German, the second oldest town in Puerto Rico, at just a steps behind Porta Coeli Religious Museum in the center of town.

Cofre de Reyes        Pig’s innards  stewed in rum  served in  puff pastry                  

Parranda                Sweet plantains stuffed with blood sausage served with spicy “beurre blanc”

  Asalto                   Pork  longaniza  sausage sautéed in wine and sugar cane           

Año  Nuevo        Tostones  & caviar  served with sour cream and parsley          

 Porta Coeli            Jumbo shrimp  stuffed with Puertorican cheese and sweet  peppers, breaded in rice and fried                                          

Sushi Boricua         

Beef skirt, sweet plantains

                    sautéed Red snapper, peppers, onions

Pizzalaitos          Crunchy bacalaítos   topped  with       Bacalao or Beef or Lobster or Crab               

Canastas Loiza       Alcapurria cups  stuffed  with      Bacalao o Beef or Lobster or Crab         

Queso Porta del Sol      fried Cheese balls stuffed with vegetables                      

Holandés Boricua         Gouda cheese  and chicken fondue  served with turnover chips    

 

First Course

 

Salto del Cabro   Goat  stewed in white wine and herbs served with yautia croquettes

Piquito Jumo       Pork liver  stewed in red wine served  with boiled green bananas  

Timbal     Tower of apastelado rice and  pork  served with roasted pepper coulis 

El Antojo          Mofongo  in  a  bacalao stew

Linda Violeta     Eggplant terrine, combined with roasted peppers, cream cheese and almonds served with coriander pesto                                       

 

Main Course

Éramos muchos   Rabbit   chilindrón served over polenta                          

Añasco         Lobster  stewed in champaign, almonds and tomatoes served with  hayacas

Leyra       Casserol of bassa  and  vegetables, sprinkled with parmesan cheese, served with tostones

Voladito   Codfish  filet  dipped in bacalaíto batter served over  green banana'  escabeche, fish broth and shrimps                                               

Contra la corriente       honey glazed Salmon  served over sautéed cabbage and white beans 

 

Salinas       Red Snapper  filet served with mojo isleño and a sweet plantain and cheese turnover

El Clásico    Filet  mignon  with or without shrimp wrapped in bacon served over a spaghetti  pancake and wild oregano  and chorizo sauce  

Aplatanao   Beef Skirt   breaded  with green plantain flakes served with arroz apastelado and sautéed onions and tomatoes

Eureka       Chicken breast  sauteed in ginger and brown sugar served with a tuberb roll and breaded vegetables

 Indecisión  Chicken breast  smothered in a three cheese  sauce and chorizo served with onion rice and sautéed celery

Lasaña A 2 Tiempos     A layer of cheeses, atop a layer of onion rice, atop a layer of beef skirt  or chicken  or crab  or lobster smothered in tomato or béchamel sauce and baked

Ese rico lechón       Pork loin  stuffed with sundried tomatoes, prunes and Puertorrican cheese in a rum and sugar cane sauce served with scalloped potatoes and eggplant caviar

 

Patitas No Me Toques     Deboned pork feet, stuffed with chickpeas,  chorizo and requesón cheese, then baked. Served with salted pork rice, watercress salad and a chickpea reduction.

                                 

    Our cousine we like to call Puertorrican revival.  Most of our dishes are based on old Puertorrican recipes, some prepared our grandmothers way, others, somewhat modernized.

     Most of our ingredients are acquired from local farmers, thus ensuring the highest quality and freshness.
